The original rock candy. Brown sugar is melted and then allowed to crystallize into semi-translucent gemstone-like chucks. Bulk coarse brown rock sugar crystals can be eaten straight but makes a novel addition for a dinner party when coffee and tea are served at the end of a meal. The flavor is sweet and rich, with hints of caramel.
